Caramel Custard Pudding

Hope everyone is fine. During this summer season let’s try a easy pudding with very less ingredients caramel custard. It’s a easy pudding which is popular all over India but made especially well by the Parsis, Mangaloreans (both from Western India) and the Anglo-Indians. It can be steamed in a idly cooker or baked in the oven. I have steamed it in a idly cooker.
Lets begin

Course: Dessert
Cooking Time: 45 minutes
Serves: 6-7
Diet: Non Vegetarian

Ingredients

Milk – 2 cups
Egg – 4
Powdered Sugar – 10 tblsp
Vanila Essence – ½ tsp

To caramalize sugar

Sugar – 2 ½ cups
Water – 1 tblsp

Method
Step 1:

Beat four eggs in a bowl for some time
Step 2:

Into the beaten eggs add milk, powdered sugar and vanila essence. Beat all this well for a minute. Keep this aside

To caramalize sugar

Step 1

Heat sugar in a pan along with one tblsp water. Put the flame in simmer and mix well until it becomes golden brown in colour. Immediately off the flame after its golden brown
Step 2:

Pour the caramel sauce into the pudding tray. Place it aside for some time.
Step 3:

Now pour the beaten pudding mixture upon the caramel sauce.
Step 4:

Now steam the pudding in a steamer or idly cooker by covering it with a foil paper for 30 minutes.
Step 5:

Now open the steamer and check whether it is cooked properly. Then after it is cooled place it in fridge for 5 hours.
Step 6 :

After its cooled flip it upside down. Now you could see a beautiful golden caramel pudding. Serve cool.
